Like a good, unoaked Sauvignon Blanc, this wine is very dry and high in acids, with citrus, apricot and mineral flavors that make you think of oysters. It’s a very good wine, and showcases the enormous possibilities of this variety in California.

Tempranillo continues to struggle to find a California identity. This warm-climate version strikes one path, in the direction of a soft, dry and fruity wine, with cherry flavors and an earthy, dried herb edge. The next step is for depth and complexity.

Simple and soft, this rustic wine has ripe red cherry flavors. It’s very dry, with all kinds of oaky, peppery spices. It’s not an insult to say it’s the perfect upscale cheeseburger red.

This Spanish variety, rare in California, is distinctive. It’s full-bodied, with a thick texture and dense weight that carry rich, almost syrupy, flavors of peaches and apricots. But brilliant acidity keeps it all lively, and it’s fully dry.

Looking for something different? Try this very dry, crisp, minerally wine, made from a grape popular in Spain and Portugal. It’s really wonderful, with lemony, flowery flavors and an edge of peach custard. The acidity is terrific.

Very dark, densely layered, and dramatically full-bodied, with its lush, thick tannins and gobs of rich black cherry fruit. Tastes and feels like melted jam, flooding the palate with oozy flavors. But it’s bone dry. The trace of astringency in the finish may go away in a few years.

A nicely fruity wine that showcases this Spanish variety’s pretty cherry, rose petal and dry chocolate aromas and flavors, and lets Lodi’s heat contribute ripe, soft tannins. It’s an easy wine, very dry, with a bite of acidity on the finish.

Soft and melted in tannins and acids, this dry red wine, which is the same as Grenache, has intense flavors of perfectly ripened cherries, with a rich coat of oak. There’s a peppery tingly feeling that suggests a nice barbecued steak.

Albariño is one of those new white wine varieties that’s creating such interest. This wine is dry and crisp and minerally, with honey-infused flavors of citrus fruits, apricots, peaches and wildflowers. It’s a great sipper and so versatile with everything from Mexican to Vietnamese.

This wine, from Lodi, is too ripe. Although it’s dry, it has the taste of shriveled raisins, with a raisinskin bitterness. There’s some oak in there that seems oddly uncomfortable, adding a caramelized finish.
