Blockbuster aromas of honey and toast, ripe apples and citrus are complex from the first pour and develop even more complexity with air, turning meatier and more savory. Creamy and smooth in the mouth, with cascading flavors of buttered nuts and lush fruit, all balanced by great acidity and length. Drink now or hold another 5 years.

The Bollinger style is always rich, food friendly and impressive. This wine is all of those things, with power and intensity of flavor along with ripe fruit, a layer of toastiness and a dry aftertaste. This is a style of wine that can take even more bottle aging. Yeasty and layered with streaks of citrus and stone, saturated with fresh bread-dough scents and bursting with fresh fruit, it hits the palate like a middle linebacker and holds it in a bulldog’s grip. Flavor flavor flavor, through a confident, exceptionally long finish.

With this vintage, there are signs of a wine that is maturing fast. That’s the initial impression. But at the same time, there are wonderful dry fruits, minerality and sweet hazelnuts, all finely in balance. The layers get more complex, bringing in toast as well as acidity. Almost ready, but worth aging.

This young vintage is outside the usual Grande Année range of vintages. Bollinger sees the unique heat of 2003 as a reason to make a special vintage for release early. The wine is rich, but being Bollinger, the richness has translated into the full character of the house style. It is relatively dry, packed with white fruits. Not for aging. Drink now.

The Bollinger R.D. (recently disgorged) is Bollinger’s answer to a prestige cuvée. Keeping the wine long on its lees (this was disgorged in June 2006) yields a wine that is very much in the rich Bollinger style. This is a beautifully balanced wine, with acidity, intensity and structure in perfect harmony. It is still so young, and certainly could age for years.

Mucho bang for the extra bucks. This Pinot (63%)-Chardonnay (37%) powerhouse is four-fifths grand cru juice, and carries its weight and richness with a confident swagger. You’ll find lots of toast and leesy components, with the scents and flavors of cheese, roasted nuts and bread dough wafting and working their way through a huge finish. A giant.

An excellent balance of earthy, meaty flavors and bright, racy acidity. Its bead is fine; its mousse, creamy. Tangy lemon and grapefruit flavors liven up the finish.

True to the Bolly style, this is a large-scaled Champagne, with outsized aromas and flavors of mushrooms and toast layered over a rich baked-apple core. The mouthfeel is lush; the finish long. Decadent enough that there’s no need for additional age.
