Opening pastry aromas are a bit heavy, but the palate is solid and balanced, and the flavors of gooseberry, green herbs and apple work. This Cava has a mild green character to it once it hits the mouth, but it finishes dry, crisp and focused. 450 cases made.

An interesting white wine based on Chardonnay and Xarello. It’s like Cava without the fizz, and the nose starts out dry and like Sherry before green apple and lime come into view. Tastes really dry and chalky, with mineral and apple at its core. Imported by Organic Vintners.

Surprised by taste at first, but warmed up to it

Average. Not what i'm looking for in a sparking wine. The degree of carbonation doesn't do it for me and it seem to have much depth if that's the right term.... Bring on the Taittinger.

Delicious! really easy to drink, and much less dry than champagne. Lovely hints of apricot. Very fruity. Just delicious!

Dry to the taste and features aromas and flavors of crisp green apple, honey, melon and hay. Nuances of honeysuckle and citrus squirt hover underneath. A well made Cava that's super balanced and goes down easily - perhaps too easily!
