Grenache stars, offering oodles of ripe cherry liqueur flavor, while a dash of Syrah brings a deeper touch of blackberry and licorice. It’s a deft combination. The wine is distinctly Paso Robles in the soft acidity and gentle tannins. It melts in the mouth like a chocolate truffle, yet finishes dry.

Smells vegetal and inert and tastes slightly sweet, with cherry cough medicine flavors. Gets slightly better as it breathes.

Has all the hallmarks of Viognier, namely lots of tropical fruit, wildflower, vanilla and spicy aromas and flavors, and finishes thoroughly dry. Could use more brightness and zest, though, as it’s a bit flat.

This is a Cabernet to drink now. It’s soft and clean and pleasantly complex, with black cherry, currant, cola, spice and sandalwood flavors, and is thoroughly dry. It will go downhill quickly, though, so open on buying.

The trick to Viognier is to preserve the exotic flavors yet keep the wine dry. This one has the flavors but not the dryness. It offers a flood of ripe tropical fruits, apricots, honeysuckle flowers and vanilla, with the crisp, spicy sweetness of jam.

Richness and opulence characterize this white Rhône blend of Roussanne and Marsanne, which is easily Cass’s best ever. It’s delicous in vanilla cream-accented Mandarin orange and honey flavors, with a tang of minerality. The alcohol is high, yet the wine maintains exquisite balance and poise.

Dark for a rosé and rather full-bodied, this blush has pie-filling flavors of black cherries and red currants. It’s simple and direct but tasty. Nice with ham, fresh fruit, or a shrimp salad with bitter greens and grapefruit.

Soft and generous in fruity flavor, this has pronounced new oak that accents cherry, raspberry, smoky vanilla and peppery spice flavors. It’s mainly Grenache, with a little Syrah, from the Templeton Gap area of Paso.
