There’s quite a bouquet in this Minervois: black fruits, clove, olive, cinnamon, bitter chocolate and slight volatile acidity provide quite an aromatic spectrum. This compact, tart wine is taut, with a compressed complexity and a rather hard palate feel. Works now with complex foods—and will be even better after a few years in the cellar.
