While all the focus in Bordeaux is on the reds, white Bordeaux is an unjustly neglected category. It can be made from a blend of Semillon and Sauvignon Blanc, but in 2004, the crispness of 100 percent Sauvignon Blanc, as in this wine, gives a wine that is light, fresh and immediately fruity. Made by top white wine producer Vignobles Despagne, the wine has flavors of grapefruit are crisp and are balanced with just a touch of tropical fruit. Bring on the seafood.

Jean-Louis Despagne has made a deep, dark-colored wine from his flagship property. It is polished and smooth, with rich fruit that is still dominated by wood at this stage, but with powerful dark fruit flavors underneath. This is a wine with great intensity and the chance to age for at least 10 years.

Nettles and hedgerow aromas on what is a delicious rosé. It talks of Merlot, but the reality is more about fresh, crisp red fruits and light acidity. A big success.

For a red from the heart of the white wine country of Entre-deux-Mers, this is powerfully dense. It boasts plenty of wood flavors to go with the black currant and dry tannins. But it also has an underlying richness and fine, firm structure. Hold for at least 5 years.

A beautifully ripe wine made in tiny quantities (5 barrels) in exceptional years from a small parcel of Sémillon. It’s rich and unctuous, filled with flavors of molasses and honey, spiced with dry botrytis. There’s an intense, smoky aftertaste.

This is all about great fruit bursting out of the glass. Red fruits dominate, with smooth tannins in support. There is a density at the heart of the wine, layered with fresh acidity. Drink now, but will age over 2–3 years.

Soft, ripe, dominated by peaches, pears and a rounded, toasty character. The spice is dominant, giving the wine an exotic edge. The more rounded style gives concentration as well as a fine, finishing velvet texture.

Hugely herbaceous, this appeals now for its currant, green plum, pink grapefruit and lime character. Otherwise, age for 2–3 years to soften the forward burst of freshness and bring out more subtle notes.

An intensely herbal, thyme-flavored wine, with a creaminess that enhances the full, but still very fresh character. Sauvignon Blanc’s green character dominates, but is tamed by the ripeness of the fruit.

Powerful and rich, from superripe grapes, this wine follows a style in Bordeaux that seems to want to make white Burgundy. It is creamy, rounded, spicy from toast, with white fruits, only a touch of citrus, and a full, intense aftertaste.
