It’s not just the inviting scents of white pepper and roasted meat, or the well-ripened blackberry, cherry, blueberry and cocoa flavors that make this wine so good. It’s also the fine tannin-acid balance. The wine is lushly fruity, yet structured at the same time, finishing with echoes of pepper and meat. Should drink well for 5–10 years.

Soft, cherried and voluptuous. It is three-quarters Merlot, with the balance Cabernet Sauvignon. The cherry, chocolate and cassis flavors make it instantly appealing, but it has a tannic intensity that will hold it for a good five years.

This wine is soft both in acidity and tannins, and simple and semisweet, with sugared raspberry tea and cola flavors, and isn’t going anywhere.

Nice and fairly complex, showing ripe cherry, blueberry and cassis fruit, well-oaked, this is backed up by rich tannins that can be described as mountain-style. But they’re new-style tannins, silky and refined, so the wine is drinkable now. Will develop for up to five years.

A gentle, tasty Cab Franc that shows the variety’s pure, clean cherry and cassis personality. It’s really luscious at the flavor level. It’s not particularly complex, though, and finishes a little obvious in sweet oaky caramel.

This is quite a success for a 2000 Cab, probably due to the extreme mountain growing conditions. Although it is strong and even astringent in tannins, there is a sweet, flattering richness of cherry and blackberry fruit that is particularly evident on the long finish. It is an obvious cellar candidate. Drink 2008 and beyond.

Constant produces intense red wines that are destined to age, and this one is no exception. It drinks well now despite sizable tannins because it’s so soft and sophisticated, but easily has the balance for the long haul. With its tremendously ripe black currant fruit, it should develop bottle complexities through 2015.

Imagine a rich, ripe mountain Cabernet without the edgy tannins and spicy currant flavor of the Sauvignon. Complex in cherry and oak flavor, with a smooth texture and an explosion of spice. It has a chocolaty finish, and is lip-smackingly delicious.

A high-altitude wine from the Sonoma side of Diamond Mountain, this Syrah’s main ingredient is tannin, the big, tough kind that dries out the palate. Will it age? My best guess is, not for the long term. There’s good cherry-blackberry fruit but the telltale finish is short.

A massive wine that floods the palate with ripe flavors of blackberries and chocolate and sweet, smoky oak. Ripe, sweet tannins make for a good grip. Finishes lush and opulent, and a little soft.
