Wine of the night at Cyrano's Casoulet BYO/Sam's tasting dinner (2/2006). Followed the 2000 at dinner. Very similar, but this is just a bit deeper, fruitier and perhaps more complex. Both drinking very well after several hours in decanter. Great balance of fruit, acid, tannins while offering a great bouquet on the nose and long finish (2/2007).

Decanted 2 hours before bringing it to the restaurant. Then it sat open for about an hour while we had a white with our appetizers. Tasted when first opened and it showed all its potential but had a hard edge and sharp tannins. When poured with our steaks it was soft, full, and round with great balance. The hard edges were gone and replaced with a long and most pleasant finish (2/2006). Brought to a friend's. Was served without decanting or allowing any breathing time. Was very good, but could have been better (3/2006). Well balanced. Needed every minute of the 2 hours plus in the decanter (2/2007).
