Yeasty on the nose, with very crisp green acidity and flavors of citrus and grapefruit. A delicious example of the Aligoté grape, it is a light, ready-to-drink wine for oysters or white fish.

Textured wine, the crisp white fruits are tight against acidity and spice. It fills the mouth, broadening into a wine that becomes creamy, with wood and green plum skins giving structure. This is another example of how a lesser appellation can shine at the hands of a master vigneron.

Pleasant, soft wine, easy to drink, its fruits round and somewhat dilute. It doesn’t resonate, but is certainly fresh and crisp.

Jayer-Gilles has vines on the lower slopes of the Echézeaux vineyard, hence the subtitle of the wine, “du Dessous.” The wine has finesse, but with structure, and is impressively powered with tannins (although with a nagging green bean character as it opens up), spice, a definite amount of toast as well as freshly acid red fruits.

On the austere side, with fruit that has considerable—perhaps too much—freshness. Berry flavors and tannins verge on stalky, and the acidity gives the wine a light aftertaste.

There is great purity of fruit here. The wine that shows the freshest of strawberries, and is given a jelly flavor by their sweetness. The tannins are a core of dryness and blend satisfyingly with the acidity and fruits. For such a humble appellation, this is an impressive wine.

A beautifully perfumed wine, not powerful, but delicate and delicious. The fruit, as with all of Gilles Jayer’s wines, is very pure, its raspberry flavors piercing through the tight tannins and prominent acidity. This is a fine expression of elegant, fresh Pinot Noir.

There is an edge of minerality, a tight texture. But that lies on a wine that has some weight and richness, white fruits giving a broad swathe of ripeness, just brought into line by the taut acidity.

This shows the proper attention to structure that is the inheritance of any Nuits-Saint-Georges. But around that structure, Gilles Jayer builds a velvet curtain of ripe black fruits, touched with spice and leavened with acidity. It’s a wine that is delicious now, but certainly should be aged.
