Lots of richness in this dry, slightly tart wine, with its furry coat of tannins. It shows cherry, blackcurrant, herb and coffee flavors that finish with a nice, cocoa-infused complexity.

The wine has good plum, cherry and raspberry flavors, though the acidity is a bit pronounced. On the finish, there’s a nice toast and vanilla edge to round things out. Moderate in length at the end.

Pretty much near the top for warm-climate Paso Cabernet, with its sweet, pretty tannins, soft acidity and well-ripened fruit. The flavors, of blackberries, cola, sassafras and spicy plums, last deep and long. Drink now for freshness.

A big, ripe, exuberant Syrah, quite high in alcohol and long on jammy cherry-blackberry fruit, dusted with mocha. Finishes dry and long in fruity concentration.

From the cool side of Paso Robles comes this Chard, which nonetheless shows its warm appellation in its earthiness, which resembles some Napa Chards. The fruit veers toward apples, and the wine is totally dry.

There’s lots of alcohol and heat in this wine, but it’s fully dry, and the robust fruit and coffee flavors will appeal to fans of warm-climate, country-style Zins.

A weird one, with aromas and flavors that range from soy sauce to meat to mint and pepper. Aggressively tannic, and not likely to age gracefully, so drink ’em if you got ’em.
