This is only just rosé, its onion skin color as pale as possible. The wine has some red fruit flavors, but it is more about toast, yeast and a lively, smooth finish. Worth considering with salamis or ham, as well as salmon.

It’s a full, creamy mouthful of ripe almonds and apricots, but given maturity by a fine layer of toast and grilled bread. There is a definite yeastiness here, layered over the balancing acidity.

Owned by the Chancel family (whose main holdings are in the Lubéron in southern France), this small Champagne house has made an exceptional 1997. It is now reaching maturity, with all its elements in balance, rich but satisfyingly dry, with toast and intense structure and acidity.

Already a touch toasty, this is not as searingly dry as some Zéro Dosage Champagnes. Mind you, there is no doubt it is dry, the crisp apple, grapefruit and taut structure all confirming that. In the end, though, it has weight along with lively acidity.

Just approaching toasty maturity, this is a rich and full wine, its white fruits and perfumes floating above yeast, cookie and pine nut flavors. It has a great mouthfeel, a tingling character, acidity and richness in harmony.
