Luis Pato’s Bairradas used to be the standouts of the D.O. In a sense they still are, although he has chosen to label them with the regional denomination of Beiras in protest over restrictive practices. In this example, Pato has harnessed the rough tannins and brash acidity of Baga into a rich creamy wine filled with blackberries and anise. It’s still tannic and crisp, but it just needs another 10 years in the cellar to become fully appreciable.

Not even the magician of Baga, Luis Pato, can make a lush, fruity Baga wine at this price point. Shows some horsey, leathery notes as well as black cherry and plum fruit. But it’s also lean and hard. Drink now with rare beef, or hold and hope for the best.

Ripe fruit and aromas of bitter coffee, with some firm, dry tannins but also juicy black fruits, make this single-vineyard 100% Baga firm but generous. Age it for another 4–10 years. —R.V.

A fine burst of simple, fresh fruit and crisp acidity. Mainly made from the Maria Gomes grape, with a small amount of Arinto, the wine has fresh apples and citric pink grapefruit.

Luis Pato, whose name means “duck” in Portuguese, is the man who has tamed the local Baga grape by keeping its acidity and tannins in check. Made from 70-year-old vines, this is a stunningly concentrated wine, with sweet chocolate flavors and silky, tarry tannins. The juicy black-currant fruit makes it very drinkable. —R.V.

Pato is a Pinot Noir lover, and you can see his affection for Burgundy in this wine. Deep, rustic aromas lead to fresh fruit, with fine blackberry flavors and lovely, juicy acidity. This softly tannic wine is a blend of Baga and Touriga Nacional, with power but also elegance. —R.V.

Dusty, tarry fruit aromas come from this deep, nearly black-colored wine. It is smooth, almost velvety, with strong, dry tannins under the fruit. Intensely concentrated, it is certainly ageworthy, probably maturing well over the next five years. Vinha Pan is short for Vinha Panasqueria, the name of the vineyard. —R.V.
