Chiaro di Stelle is a bright rosé with deep ruby and garnet highlights. From an aromatic point of view, the wine focuses on wild berries and dried herbs such as sage, oregano and basil. In the mouth, it shows density and silkiness.

Extremely floral on the nose and well structured in the mouth, this pretty white wine from Sardinia offers aromas of yellow rose, vanilla bean and almond paste. There’s enough density here to pair with pistachio-encrusted sole or sea bream.

Pala’s Stellato is a luminous and bright Vermentino with fragrant aromas of passionfruit and citrus with a tonic, fresh feel in the mouth. Grapes are harvested about a month later than usual to give the wine added dimension and grip in the mouth.

Named after the Sardinian word for “plow,” S’arai is a blend of Cannonau, Carignano and Bovale (vinified separately and aged in oak) that offers a full palate of exotic spice and mature fruit. It boasts excellent concentration and soft, drying tannins.

Pala’s Entemari is higher in intensity and sophistication compared to the rest of the white wine portfolio and seems intentionally crafted for an elaborate seafood meal. Dried flowers, passion fruit, sweet nut, natural rubber and nutmeg spice add dimension and personality.

This is a beautifully crafted 40-30-30 blend of Cannonau, Carignano and Bovale with dark concentration and vibrant cherry fruit, bold espresso and background notes of toast, vanilla bean and cedar thanks to 12 months in barrique. All these aromas are contained within an elegant whole and the wine’s quality is evident. Firm in structure: drink after 2008.

Added structure, thanks to a blend of Vermentino, Malvasia and Chardonnay and power due to higher alcohol, create a robust Sardinian white that would pair beautifully with elaborate seafood (think lobster). The fruit is there but is not overstated and comes on the heels of pristine mineral tones.

This is a lovely dessert wine that should be served very chilled. Its aromas are intense and inviting and recall almond, plush peach, apricot and honey. Smooth and creamy in the mouth, the wine delivers extra richness and a luscious mouthfeel (grapes are left to dry on the vine).
