The classic, highly crisp (call it acid) rosé of Weststeiermark is an acquired taste, currently a cult in Vienna. Think of its cassis and piercing redcurrant flavors with food (perhaps fish or seafood) and this style makes perfect sense. To drink young, but not too chilled or the acidity kills the fruit. Made from the local Blauer Wildbacher grape (as with all Schilcher wines), this is a relatively rich, cranberry and citrus flavored rosé, with tannins and forest berry fruits. It’s delicious, just don’t be shocked by the typical acidity.
