Nicely dry and very crisp, with mouthwatering acidity that scours the palate and makes it brisk and clean. It’s a little too fruity, though, with jammy pineapple, lemon and lime flavors that pall after a few sips.

Very, very tannic. Sometimes these super-astringent young Napa Cabs age well, but in this case you have to wonder if the fruit will outlast the tannins. Buried deep down are bone-dry, but savory, blackberries and black currants. It’s a big gamble to cellar.

Brilliantly dry and crisp, with lemon, lime, grapefruit and spice flavors that scour the palate and get the tastebuds watering. But a little too strong in feline, pyrazine tastes.

Quite a good Cabernet, virgorous and dry, with an earthy edge of sweet, dried herbs alongside the blackberries and cedar. More elegant and food-friendly than many of the fruitier, high alcohol, oaky Cabs out there.

There’s a pure, sweet Cabernet in the bottle that wants to come out, but it’s held back right now with sturdy tannins that make for a palate astringency. The flavors are explosive, of blackberries, cassis, cherries, chocolate and smoky new oak. Needs time. Best after 2011 and well beyond.

Bold and direct, this wine appeals for its fruity flavors and dry balance. Blackberry pie, olive tapenade, roasted coffee bean and smoky oak aromas and flavors lead to a tannic midpalate and finish. Will benefit from moderate aging through 2010.

A worthy followup to the 2005 bottling, the ’06 shows similarly explosive flavors of blackberries, cherries, blueberries and violets, with plenty of new oak. It’s bone dry and tightly wound in tannins now, and needs time, but should make for a fine bottle. Best 2011–2014.

Not ripe enough to satisfy, this wine has minty, gooseberry flavors with a strong dose of that feline smell. Not even the honey and fig finish can overcome the greenness.

This is an amazing red to pair with a steak as amazing to dare to compete with it. First off, Round Pond makes great Cabs in general. If you ever get a chance to do a vertical tasting at their vineyard in Rutherford...do it. They pair their wines with small gourmet bites, and much like this 2005 Cab, their others are equally robust and full-bodied, yet elegant.

I'm enjoying this Rutherford cabernet at Harris' steakhouse in SF. Burnt cherry and clove on the nose. Full bodied, rich and powerful with just the right amount of tannins. Dark berry fruit with peppery notes and a touch of oak. Lengthy finish that just calls out for my medium rare filet
