Bone dry, this is a stunning wine that shows the aging qualities of the 1996 vintage as well as the intensity of Salon. It is packed with acidity and firm green fruits, leaving a twist of lemon and nuts on the finish.

The latest release from Salon, this just explodes in the mouth with mineral, steel and flint. The tiny mousse has flavors of yeast and just a touch of toast. It is rich, but so austere and structured. Like many Salon Champagnes, this will age for 20 years or more.

The fabled Salon’s latest release is much riper and softer than the great steely 1996 vintage. This suggests it is likely to be ready to drink soon. In the meantime, the acidity is supremely fresh, with grapefruit edges and green apple flavors. And then there is minerality and a tight, structured aftertaste as a reminder that this great Champagne is always going to be more than its fruit.

Full and elegant, even plush, from the sexy butter, caramel, smoke and vanilla bouquet through the plum, tropical- fruit and dried peach flavors and chalk and mineral accents on the palate. There's great nuance here, as there always is with Salon. Though it's younger, this seems already softer and more forward than the 1985 and 1988 tasted last year. Drink now through 2010

From the ripe, open 1995 vintage, this is a round wine with flavors of lemons, grapefruits and almonds. The angles of acidity have been turned into curves as it develops and softens. This is ready to drink now, but should age well over 5–10 years.

At less than 10 years of age, this is rather young for a Salon release. It’s leaner, fresher and more citrusy than you would expect from Salon, without the trademark richness that should develop in time. If you buy a bottle this year, expect to age it five or more years for best results.

Still seems quite young—or maybe it will always be a little tight and austere, especially next to its voluptuous older sibling, the ’85. Biscuity and yeasty, with an angularity that refreshes the palate.

An enormously complex and rich wine that almost defies description. Golden apples, raisins and pears; bread, cream, vanilla, honey and nuts. The list goes on and on. Full and rich; the mousse is extremely fine and creamy-textured in the mouth. Drinking beautifully now, it will probably hold another ten years or more. Even better than a bottle reviewed last year.

A thorough classic, with soda and mineral on the nose along with pineapple, apple and other white fruits. The flavor profile is as pure and ethereal as it comes, with luscious apple, melon and citrus. Lively and persistent on the finish, with a touch of toast.
