A solid effort: soft, round and polished, with a classic Cab profile. Cherry, cola, blackberry and cedar aromas and flavors have a delicately earthy edge of fresh Provençal herbs. Rich in ripe tannins, with a splash of Merlot, is beautiful now, and should age well for many years.

Immature now, with sweet, jammy blackberry, cassis and charred oak flavors, wrapped into firm, hard tannins. Tastes almost rustic, but there’s pedigree in there. Give it a few years and see what happens.

Sweet new oak stands out, giving this Cabernet caramel aromas and flavors. But the oak is perfectly in keeping with the wine’s massive power. Underneath the wood char is a dry, tannic wine with rich blackberry and currant flavors. It’s a bit disjointed now, needing time for everything to mesh together. Could be really something around 2015.

This is a vigorous young Cab that will reward aging. It’s bright and savory in cherry-berry, herb, new oak and spice flavors, with rich, sweet tannins. Better after 2008 and through 2012.

This Sangiovese, Merlot and Cab blend is sharp in acidity and has overripe blackberry flavors that veer beyond currants into raisins. Lots of new oak adds char and vanilla. Drink now.

Classic Napa Valley ’01 Cab. Ripe, soft, complex, juicy and delicious, showing upfront black currant, cassis, chocolate and smoky oak, with a caramel richness from well-charred wood. The tannins are deft, lush and sweet. Gets more interesting as it warms up on the table. Try decanting for a few hours.

As ripely fruity and oaky as any Cab out there, offering a flood of blackberries, currants, cherries, raspberries, mocha and sweet, smoky new oak. Yet lifted up by the tannin-inspired structure and a welcome, herbaceous note of olives. Marries the best of the old and new styles, a terrific Cabernet that will develop for 6–8 years.

A young, tough, gutsy Cabernet marked by extracted, jammy fruit flavors of blackberries and chocolate, sturdy tannins and elaborate oak. All the pieces are fine, but nothing has come together. Needs time. Give it until after 2011.

A beautiful young Cab that continues Salvestrin’s unbroken track record of the last several years. Dry and rich in tannins, it shows enormously concentrated fruit flavors of currants, blackberries, black cherries, mocha and spice. Gorgeous now, and should improve over the next decade.

Black-cherry flavors dominate, with oak providing smoke and vanilla notes. In the mouth, the flavors also veer toward ripe cherries. Tannins are fairly strong, with a puckery finish, but it’s nothing that Parmesan cheese and olive oil can’t tame.
