From his 30-acre vineyard in the Aube, Serge Mathieu makes a complex, honeyed blend of two-thirds Pinot Noir and one-third Chardonnay. Flavors of hazelnuts and quince go with fresh balanced toast and yeast. The wine practically floats across the palate, leaving a light, fresh feel. This is a great apéritif wine.

Elegance is the hallmark of this wine. It’s light, poised and elegant, with fine, crisp fruit and good balancing acidity—an excellent reflection of the relatively light 1997 vintage.

A full-bodied Champagne, with ripe yellow peach and toast flavors, finishing with ripe currants. A 100% Pinot Noir, it has good weight on the palate and distinct acids on the finish.

A selection from Serge Mathieu’s best parcels, this wine has full, ripe fruit, layers of green grapefruit flavors and white currants. It has good depth, finishing with fine toast and acidity at the end, just missing a higher mark because of its unbalanced dosage.
