Sottimano makes five expressions of Barbaresco and this wine from the Pajoré cru delivers surprisingly ripe aromas of cherry, wild berries, white truffle, chopped herbs and drying mineral. It’s an elegant and refined wine with noticeable acidity and a sharp finish, yet the 2007 summer heat shows up in the wine’s flavors and fleshy aromas.

Oak aging (with 25% new French barrel) has helped shape sweet aromas of vanilla and exotic spice backed by loads of cherry and ripe forest berry. Characteristic aromas of violets, wet earth and graphite appear at the back and the wine is firm, thick and smooth on the close. Consider long cellar aging: 10 years or more.

Fausoni is a rich and opulent Barbaresco that presents a veritable wall of flavors that surrounds you on all sides: Vanilla, sweet cherry and chocolate are the most obvious aromas, but Indian spice and black currants also make an appearance. Awesome intensity is followed by firm structure. Drink after 2015.

The Cottá expression is slightly less intense than Fausoni and has a sharper, edgier character overall. The aromas are precise and focused, including forest berry, bramble and white chocolate. The wine feels broad and rich in the mouth and ends with firm, drying tannins.

This is a subdued and elegant Barbaresco with a delicate delivery of aromas. You’ll recognize Indian spice, cola, anise seed, black currant, licorice and vanilla seed. The mouthfeel is thick and masculine, on the other hand, and the wine closes with austerity and firmness.
