Delicate floral aromas mark this slighty sweet bubbly. The flavors are typically Riesling, including green apple, honeysuckle and apricot, all backed by good acidity. The finish is clean and a little sugary.

This is a sweet, simple sparkling wine made from 60% Chenin Blanc and 40% Chardonnay. It has a lemon/citrus nose, with some soapy scents that carry through in the flavor. The big bubbles and sugary mouthfeel suggest that it was made by the charmat process; in any event, it’s a bubbly best suited for mixing with orange juice or something tart like cranberry juice, and served as a Sunday morning spirit-lifter.

From the winery’s best lots of Riesling, this special selection definitely acquires an extra dimension of flavor beyond the excellent “regular” bottling. Bursting with ripe, juicy fruit, it balances its intense flavors atop a delicate, graceful frame. Best Buy. —P.G.

Riesling has always been a strength of this winery, and this wine clearly shows why. It has a lightness and delicacy missing from most other domestic Riesling, yet it is not simple. Its complex, subtle, food-friendly flavors are right on the money. Best Buy. —P.G.

Idaho and Merlot are not thoughts that generally spring together in the mind of the wine consumer, but Ste. Chapelle makes a good run at crafting an attractive, perfectly balanced wine here. The fruit is cherry and lightly herbal, and there are interesting flavors of earth and mocha, too. Best Buy. —P.G.

By “soft” the winery means sweet. This is a low-acid style, showing flavors of pear, melon and mango. It’s a good sipping wine, but perhaps a bit too soft for most foods. —P.G.
