Use ice wine for a twist on a classic cocktail.
Coming up this weekend is International Polar Bear Day, created to raise awareness of the melting ice that the endangered white giants call home. Other than keeping our carbon footprint low, we can't think of a better way to salute the Polar Bear than by drinking some ice wine--or, better yet, making a cocktail with it so we can try to forget about the global environmental problems.
Ice wine, which enjoys most of its prestige in Canada, is made by leaving the grapes on the vine well into winter, and only picking them once they're frozen. When the grapes are pressed, the frozen water content of the grapes stays behind and more sugar comes out in the juice. The end result: A sticky, sweet dessert wine.
There are countless cocktail recipes that utilize ice wine, usually some variation on an ice-wine martini (equal parts ice wine and vodka, shaken over ice, garnished with a few frozen grapes). But we suggest using ice wine to create a unique twist on a classic drink: the Vesper.
Normally a Vesper contains vodka, gin and Lillet (a sweet aperitif made of Bordeaux wine and citrus liqueur). Swap out the Lillet for ice wine, and you'll have a slightly sweeter, more interesting drink perfect for toasting polar bears.
• Three parts gin
• One part vodka
• Half to one part ice wine
• Frozen grapes
Combine all the liquid ingredients in a cocktail shaker with lots of ice. Mix gently for 30 seconds to a minute, and strain into a chilled cocktail glass. Garnish with the frozen grapes.
