Hervé Augustin, born in Champagne and after 30 years of experience at Laurent-Perrier, de Castellane and then Bollinger, was appointed Mana... (more...)ging Director of Champagne Ayala in 2005. The quality of Ayala’s champagnes has been the permanent focus of Nicolas Klym, the “Chef de Cave” (or wine maker), for more than 25 years. Located in Aÿ, in the very heart of Champagne, Ayala has remained like a small jewel. Its limited production and the passion of the team are key factors for an outstanding quality that deserves to be better known.
