The wine is utterly charming with bright and fresh notes of minerals, herbs and citrus fruit on the nose and palate, as well as a hint of green apple on the surprisingly long finish. When the wine is first poured the mineral character is pronounced, but as it airs the fruit becomes more assertive. If you are a fan of the wines from Sancerre in the Loire Valley, you really will enjoy this wine. It is made from 80 percent sauvignon blanc and 20 percent semillon. Try it with shell fish or dishes made with goat cheese.
