The location of their vineyard, 40 miles north of Melbourne in Central Victoria, was selected for its ideal soil and climatic conditions. its winemaking philosophy is one of minimal intervention, enabling the process to follow its natural course. John Ellis, Pretty Sally's winemaker, insists that the flavors be in the fruit in the first place. Nothing is added to affect flavors other than traditional fermentation and oak aging techniques.
