Winery Story
Hervé Augustin, born in Champagne and after 30 years of experience at Laurent-Perrier, de Castellane and then Bollinger, was appointed Managing Director of Champagne Ayala in 2005. The quality of Ayala’s champagnes has been the permanent focus of Nicolas Klym, the “Chef de Cave” (or wine maker), for more than 25 years. Located in Aÿ, in the very heart of Champagne, Ayala has remained like a small jewel. Its limited production and the passion of the team are key factors for an outstanding quality that deserves to be better known.
Tasting Note
Pale gold in color with a fine mousse, the Brut Majeur is aromatic on the nose. On the palate, it is well balanced and shows great style and complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte de Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, predominantly from the Marne Valley, gives the wine its appealing fruitiness and roundness. Brut Majeur is the best representative of the Ayala range with a relatively low dosage (low level of added sugar): 8.5 g/l

Tasty Champagne, with a capital C., Ice it, then pop the cork to celebrate actually being able to sell said bottle to other lucky consumers.
