The quality of Ayala’s champagnes has been the permanent focus of Nicolas Klym, the “Chef de Cave” (or wine maker), for more than 25 years. Located in Aÿ, in the very heart of Champagne, Ayala has remained like a small jewel. Its limited production and the passion of the team are key factors for an outstanding quality that deserves to be better known.

Tasting Note

Pale gold in color with a fine mousse, the wine is quite aromatic on the nose. On the palate, it is well balanced and shows great finesse an... (more...)d complexity. Pinot Noir gives the wine richness and a long finish while Chardonnay, from the finest soils of the Côte des Blancs, adds delicacy, liveliness and freshness. Pinot Meunier, mainly from the Marne Valley, gives the wine an appealing fruitiness and roundness.
