The quality of Ayala’s champagnes has been the permanent focus of Nicolas Klym, the “Chef de Cave” (or wine maker), for more than 25 years. Located in Aÿ, in the very heart of Champagne, Ayala has remained like a small jewel. Its limited production and the passion of the team are key factors for an outstanding quality that deserves to be better known.

On th... (more...)e nose, the wine reveals a seductive bouquet of red fruits: strawberries, raspberries and a hint of cassis enhanced by the freshness and refinement the high proportion of Chardonnay delivers. on the palate, Rosé Majeur is vinous and fleshy. it possesses a nice balance between the strength of the tannins and the delicacy of Chardonnay, leading to a very generous finish. DOSAGE: 7.5g/l

I absolutely love this bubbly. Had it again last night at the major 80 Sips (www.bottlenotes.com/80sips) event....only thing I had time to taste! Such a delicious Brut rose- ripe strawberries in cream all the way.
