Brix averaging 36 degrees, the grapes were gently pressed and the juice put into small French oak barrels (44 percent new) for fermentation and aging. Winemaster Ed Sbragia believes this use of barrels from fermentation through aging emphasizes the wines’ butterscotch and caramel notes. Finally, Ed combined the two wines in the proportions of 63 percent Sémillon and 37 percent Sauvignon Blanc.Buy Now!!
