Diemersd... (more...)al harvests all the Sauvignon Blanc grapes during the cool of the night to maintain the fruit's integrity. After pressing, the wine is chilled and allowed to settle over a 24-hour period on the skins to extract all the flavors. The wine is then racked, inoculated and fermented on the lees at cool temperatures for 15-20 days. After fermentation and maturation, the various tanks are brought together to make a final blend.This vibrant, classic Durbanville Sauvignon Blanc presents a brilliant lemon-lime color. The nose is complex with an array of tropical fruit, figs and gooseberries. These flavors repeat in the mouth along with a minerally character followed by a long fruity finish. The distinctive aromas support a wonderfully balanced palate, presenting purity of ripe fruit, coupled with a lingering harmonious finish. The seamlessness of this wine provides elegance rarely seen in this variety.
