Very tasty champagne with an awesome pinkish/yellow hue (from what I'm told this is a result of the use of Pinot Noir)

The wine has lively bubbles thanks to a second fermentation that occurs inside the bottle, as they do in France. This extended contact with the yeast cells responsible for fermentation imparts nutty and toasty aromatics that shine through on the palate as well (the technical term for this process is autolysis). Aromas and flavors of apple, strawberry and black cherry complement the toasty notes, and the finish is clean and rich with refreshing layers of lemon squirt, banana and honey dominating.
