Semillion is one of the more floral and aromatic white wine grapes on the spectrum. Of the three grapes used in making dessert wines in Bordeaux, such as Sauternes, Semillon is the one that gives these great wines their ability to age. Semillon is a favorite host of the fungus botrytis cinerea, or noble rot, that concentrates grapes sugars for dessert wine making.
When mixed, it lends acidity to Sauvignon Blanc and Chardonnay without masking their delicate aromas. Semillon is fairly easy to cultivate, consistently providing good yields and resisting diseases, except for noble rot.
