The Silvaner or Sylvaner grape traditionally dominated the vineyards of Germany and the Alsace region of France, yet it has recently fallen from grace in favor of more distinguished wines. Its small bunches and medium-sized green grapes are quick to ripen and create a highly acidic, yet rather bland, wine that is best known as a canvas for blends. Its neutral tone makes it the ideal setting for blending the more notable Rieslings of the region.
