After the yeasty sediment is removed, the wines are topped off with a mixture of wine and a small amount of sugar to balance out high levels of acidity. This liquid is called the liqueur d’expédition. The sugar content in the liqueur varies depending on the wine’s age and style. For Extra Brut, no sugar is added. Increasing amounts of sugar, however, are added for Brut, Extra Sec (medium dry), Sec (medium sweet), Demi-Sec (sweet), and Doux (very sweet).
