Dense and fudge-like in consistency, with aromas and flavors of mocha, molasses and marinated beef. It’s as if the fruit has been cooked down into an intense reduction, with even the acids magnified into tartness on the finish. At 16.4% alcohol, this is probably a better match with the cheese course than with a main. 1 Note

Katnook’s top-of-the-line Cab, the Odyssey, already seems mature, with a touch of brick to its color and some dried fruit flavors. But even if this won’t improve further, it’s at a lovely spot right now, with a lush, creamy texture, pillowy-soft tannins and wonderful cedar and cigarbox notes. Drink now–2010. 1 Note

Not as wild and robust as you might expect from the name, this offering is instead a silky-smooth blend of mint and creamy chocolate layered over a base of pepper-dusted blackberries. Despite the richness, it never seems overly heavy. Drink now and over the next 10 years. —J.C. 1 Note

Jim Barry’s Cab program is on a roll, turning out a consistent set of wines from Clare and Coonawarra. Named in honor of the Australian cricket team, The First Eleven boasts a kaledioscopic range of berry fruit, accented by mint and darker notes of coffee, cocoa and cola. It’s full-bodied and dense on the palate without being heavy, and finishes long, with impressive intensity and dusty tannins. Drink now–2020. 1 Note

Disappointing, considering its price and the performance of some past vintages. Though the nose offers pleasing pastry crust and plum fruit aromas, fruit on the palate tastes flat, with a slight green-bean note. Finishes dry, with sour plum fruit. Tasted twice. 1 Note

TapaNappa Cabernet Blend -2003 (WE-65468)

This is a joint venture between some awfully big names in wine—Croser, Cazes and Bollinger—and the wine is very good. The bouquet shows off the expensive French oak barrels (smoke and cedar), while the palate impresses with its creamy texture and supple tannins. At this stage, though, the flavors lack complexity and nuance, blending black cherry and plum with smoke and vanilla. A good first vintage—let’s hope subsequent releases are even better. 1 Note

This wine has lots of nice flavors and aromas—cherry, raspberry and graham cracker, among them—but feels disjointed and a little tart at this stage. A couple of years in the dark may do it some good; try after 2007. Imported by Old Bridge Cellars. 1 Note

Chertsey is a blend of 57% Cabernet Sauvignon, 28% Merlot and 15% Cabernet Franc. The 2005 is very ripe and open, offering plum, chocolate, cedar and tobacco, underscored by some earthy, almost Graves-like notes. Admirable concentration and complexity come together in this creamy-textured blend. Drink now–2015. 1 Note

This is a rich, ripe style of Coonawarra Shiraz, amply framed by toasty, cedary oak. The tannins are supple to the point of creaminess, the slightly stewed fruits graced with just a hint of mint. Best from 2010–2015, maybe a few years more. 1 Note

Has a hint of black pepper and mustard seed on the nose. The palate is all about its smooth, claylike feel, its flavors of cola and bramble prettily supporting it. Finishes wooly and textured. 1 Note
