It’s 100% Sémillon, 100% barrel fermented—and it’s 100% obvious that the two preceding statements are true. Snyman describes this white as a science experiment of sorts—“everything we could play with, we played with”—including 14 different yeasts and 10 barrel types. Mallowy cream and caramel aromas elbow out white peach flavors on the nose. Nutty peach pit, toast and tropical fruit flavors come to a dried herb-and-mineral point on the back end. 750 cases produced. 1 Note

A blend of 90% Sémillon enhanced with 10% Klipsun vineyard Sauvignon Blanc. Golden yellow and softly oxidized, it is made in a fully barrel-fermented style, in 50% new oak, yielding a buttery, toasty wine with details from the extended barrel time. It’s undeniably flavorful, but what is sacrificed is fruit freshness and most of the varietal character. 1 Note

Lushly aromatic, with scents of cream, vanilla, smoke and toast. Which might lead you to think it’s been aged in oak—but it hasn’t. This variety doesn’t have much of an identity in California, and this wine doesn’t clarify things. It’s very dry and clean and austere in citrus fruits, with a wash of fig, sort of like a Sauvignon Blanc. 1 Note
